Fluffy French Toast

"Fluffy" French Toast
Thanks Grandma for this filling breakfast (or dinner!)

I normally have to use a loaf and a half of bread to feed my family french toast. This recipe is awesome! It's like wrapping each toast in a pancake and my kids can only eat two, maybe three at the most. Genius!

1 cup flour
1 cup milk
1 teaspoon baking powder
1 Tablespoon sugar
pinch of salt
2-3 eggs, whipped with a fork

 Heat about a 1/2 inch of oil in a fry pan or electric griddle over medium-high heat (adjust it if it gets too hot).

Dump all of the dry ingredients into a bowl (note that my pictures are a doubled recipe!)

Whip your eggs with a fork until mixed, not fluffy or anything.
 Pour in the milk and eggs and whisk it together (thanks for helping Cheroo)

Dip each piece of bread in the batter and hold at an angle until the batter stops flowing off.

Cook each side in the pan until fabulously golden.

Mmmmm... like this....

This is some seriously filling french toast. Not for the faint of heart. Enjoy with whatever you put on your french toast!
