Lasagna - by jill E jam

I was always terrified to make lasagna. Try this easy way and see if you like it!

You'll need this for Step 1:
12 Lasagna noodles

You'll need this for Step 2:
1 lb. hamburger
1 Tablespoon dehydrated onion (or a real one, if you want)
Salt & Pepper
Prego Spaghetti in a bottle (I'm not fancy and I don't want to make my own unless I have to)

You'll need this for Step 3:
2 cups cottage cheese
1/4 cup Parmesan cheese
1 Tablespoon Parsley (dried)
1-1/2 teaspoon Oregano leaves

1 lb. of Mozzarella Cheese, grated (do it yourself and it's WAY cheaper)

Preheat your oven to 350 degrees. Fill a stock pot half way with super hot water and bring it to a boil. Add the 12 noodles and cook them according to the package (usually 12-15 minutes).

While the noodles are boiling throw your pound of thawed meat into a fry pan with your onions, salt & pepper. Cook it over high heat (it's faster) until browned but not crispy.

While that's browning (and your noodles are boiling), grate up your cheese.

Isn't that THE manliest cheese grater you've ever seen? My father-in-law found that for me at Salvation Army. I love him! He's the best manly cook! I digress..

Now you're noodle timer has beeped so dump them into a colander and rinse them with cold water. This keeps them from sticking like glue to each other.

Don't you love the yellow? I've had it since I got married!

Leave the noodles in your sink and dump the Prego into your meat. I don't really let it heat for very long since it's already pretty thick. Mine is the huge bottle from Costco so I only use half... probably 3 cups, or so.

While that's heating, you can mix up your cottage cheese concoction. Yummm! Just mix the cottage cheese, parmesan, parsley, and oregano in a bowl. I love Pyrex.

Bring everything to one spot and your ready to build!

Start with a ladle full of meaty sauce.

Dump it in the pan and spread it around. This keeps your noodles from sticking instead of spraying with a non-stick spray.

Lay three noodles length-wise in the pan and top it with some sauce. I got a little carried away. You don't have to use so much on your first layer ;)

Top that with the cottage cheese concoction.

Top that layer with mozzarella cheese a handful, or so, of mozzarella cheese.

Repeat: noodles, sauce, cottage cheese, & cheese.

Again: noodles, sauce, cottage cheese, & cheese.

The last layer will be noodles, sauce & cheese. We just omitted the cottage cheese for the last layer. Top it all with more Parmesan, if desired.

Lastly, cover with foil (loosely over the top) and throw it in the oven for 30 minutes. Take off the foil and bake it for another 15 minutes, or until bubbly and melted. Let it sit for 15 minutes to absorb the juice and enjoy!
