Award Winning Chili
Let me preface this with the fact that I NEVER win ANYTHING. Except for the Walkman I won when I graduated from high school a hundred years ago. You can imagine my surprise when I cooked up my little old chili recipe for a church chili cookoff and WON! So here you go. Hope you enjoy it too!
1 lb. ground beef
2 Table spoons of dehydrated onion (or 1-2 onions)
salt & pepper
2 - 15 oz. cans of stewed (or regular) tomatoes
1 - 8 oz. can tomato sauce
4 cans red beans
1 teaspoon salt
2 Tablespoons chili powder
2 bay leaves
Chop up your thawed meat in a stock pot.
Brown your ground beef & onions with salt and pepper.
Drain your beans in a colander in the sink and dump your meat on top.
My kids hate tomato chunks so I put them in the blender to chop them up. Don't run the blender too long or it all turns to water.
Pour the meat and beans back into your pan and add the tomatoes, tomato sauce, chili powder, salt & bay leaves.
Stir it all together good and cook it over medium heat, turning it down to low when it boils.
It will darken as it cooks and here's what it looks like when it's done (I threw in some black beans and a few handfuls of frozen corn).
